My name is Esteban and I was born and raised in Valparaiso, Chile. When I was only 11, my parents decided to relocate to the great city of New York. Growing up in Chile, I was able to enjoy my grandmother's home made cooking. I enjoyed watching her cook for the whole household, and I hoped that one day I would be able to cook those delicious meals for myself and others.

I have always considered myself an ambassador for my country. I absolutely love food, and was always curious as to why my country's food didn't really appear in the NYC food scene. Despite having little experience in the business, I took on the challenge of bringing Chilean Street food to NYC; Hence Completo NYC was born.

The Completo

In Chile, the "completo" is a very popular and delicious street food. The completo is basically a bigger version of the hot dog, but with many more toppings.

"No list of amazing Chileans sandwiches is complete without the completos. The local version of the hot dogs are famous for having way more ingredients than their international counterparts. Bread and a hot dog, of course, with sauerkraut, salsa americana (a mix of pickled onions, carrots and pickles), tomato and mayonnaise, for the original completo; or avocado, tomato and mayonnaise for the “Italian” version, the two most common ways to prepare this sandwich.
